Ahmet Dede is the former head chef of 1-star Michelin Mews restaurant in West Cork. He moved to Baltimore village in 2017 to explore food, producers and ingredients in his newly adopted home. Ahmet was awarded 1-star Michelin in 2018 at the Mews restaurant and retained it in 2019. Ahmet was also a key member as Sous Chef at the 2-star Michelin restaurant Greenhouse in Dublin.
Ahmet has an admiration and a passion for the producers, the people of West Cork and the quality of the seasonal produce. He fell in Love with the sea and the land, found kindred spirits in the people, for whom he has a total respect and admiration. They share a common ethos that respects the environment and a dedication that strives to produce the highest quality ingredients that he has never encountered before. He believes that the support he receives could not be found anywhere else. Creating happiness and quality that can be tasted.
