Doreen’s Courgette Dish

A delicious vegetable dish with Highbank Orchard Syrup


  • 1 x Large Courgette (or 4 small)
  • 1 x clove cut garlic
  • 1 x tbsp oil (olive oil preferably)
  • 1 x knob butter
  • 4 x tsp herbs, parsley, thyme, sage, tarragon, chives
  • 1 cup grated cheese
  • 300ml milk
  • 3 x tbsp Highbank Orchard Syrup


Peel,slice, seed the courgettes. Par boil them for 5 minutes. Meanwhile, prepare an oval dish, rub inside with the cut garlic and oil. Place sliced courgettes in dish with one leaning on the other until dish is full. Add knobs of butter, Pour over milk and top with grated cheese to complete. Chop together the herbs, parsley, thyme, sage, tarragon, chives and sprinkle on the top of the dish. Place in oven ( at 180) and cook until courgettes are soft - approximately 10 min. Add Orchard Syrup by drizzling over top and cook for a further 5 min until top nicely coloured. Serve Hot and enjoy!
